South Africa’s top 10 Sauvignon blanc wines. How do the chemical and sensory profiles compare?

Abstract

FNB Top 10 Sauvignon Blanc competition, presented by the Sauvignon Blanc Interest Group of South Africa and sponsored by First National Bank, is the country’s foremost platform for producers of this cultivar to showcase and benchmark their wines. Wines entered in the competition originated from all over the winegrowing regions of the country and the winning wines showed good representation of quality South African Sauvignon blanc wines. The ten selected wines were subjected to various chemical analyses including volatile thiol and methoxypyrazine determination, while the sensory profile of each wine was determined using projective mapping. Results showed great diversity in Sauvignon blanc wine styles: from fresh and fruity to green to wooded wines. The sensory results of the selected wines did not always correspond to the chemical profile highlighting the importance of other aroma compounds impacting the wines as well as interactions occurring between volatile compounds. This evaluation supplies the local and international market with information on South African Sauvignon blanc production and quality wine selection.

Effect of intra‐vineyard ripeness variation on the efficiency of commercial enzymes on berry cell wall deconstruction under winemaking conditions

Intra-vineyard variation grape berry ripening occurs within bunches, between bunches on the same vine and between vines. Although it is assumed that such variation also occurs at the grape berry cell wall level, no study to data has investigated in any depth. Here we have used a intra-vineyard panel design to investigate pooled bunches from six vines (per panel) in the context of a winemaking scenario. The dissected vineyard was harvested by separate panels, where each panel was then subjected to a standard winemaking procedure with or without the addition of three different enzyme preparations for maceration.

Impact of smoke exposure on the chemical composition of grapes

Vineyard exposure to smoke can lead to grapes and wine which exhibit objectionable smoky and ashy aromas and flavours, more commonly known as ‘smoke taint’ [1, 2]. In the last decade, significant bushfires have occurred around the world, including near wine regions in Australia, Canada, South Africa and the USA, as a consequence of the warmer, drier conditions associated with climate change. Considerable research has subsequently been undertaken to determine the chemical, sensory and physiological consequences of grapevine exposure to smoke. The sensory attributes associated with smoke-tainted wine have been linked to the presence of several smoke-derived volatile phenols, such as guaiacols, syringols and cresols [2].

Influence of methyl jasmonate foliar application to vineyard on grape volatile composition over three consecutive vintages

An alternative to improve grape quality is the application to the vineyard of elicitors. Although these compounds were first used to increase resistance of plants against pathogens, it has been found that they are also able to induce mechanisms involved in the synthesis of phenolic compounds and some amino acids. However, researches about the influence of elicitors on grape volatile composition are scarcely. Therefore, the aim of this work was to study the influence of methyl jasmonate (MeJ) foliar application on grape aroma composition over three consecutive vintages. MeJ was applied to Tempranillo grapevines at a concentration of 10 mM in 2013, 2014, and 2015 years. Control plants were sprayed with water.

Micro-meteorological, compositional and transcriptional study of corvina grape color during ripening

Grape anthocyanin content and composition could affect the quality and the production strategies of red wines. Differences in the pigment composition modify the color properties in terms of hue, extractability and stability. Thus, for the production of a highly qualitative wine such as “Amarone”, variations in the pigment composition are not negligible. The aim of this work was the investigation of the anthocyanin profile changes during ripening in Corvina grapes, the main cultivar for the “Amarone” production. The experiment took place in 2015, in two vineyards located in Valpollicella (Italy).

The ageing of white wines on lees is used in order to release higher amounts of polysaccharides by the autolytic processes in order to obtain higher-quality wines. However, this technique is too slow, because the temperature and pH conditions are not the most suitable for this process. In addition, it can also involve certain disadvantages such as a greater demand on winery resources, a longer period of wine storage, the appearance of reduction notes and some microbiological alterations.
