Monferace a new “old style” for Grignolino wine, an autochthonous Italian variety: unity in diversity

Abstract

Monferace project is born from an idea of 12 winegrowers willing to create a new “old style” Grignolino wine and inspired byancient winemaking techniques of this variety (1). Monferace wine is produced with 100% Grignolino grapes after 40 months of ageing, of which 24 in wooden barrels of different volumes. Grignolino is an autochthonous Italian variety cultivated in Piedmont (north-west Italy), recently indicated as a “nephew” of the famous Nebbiolo (2) and is used to produce three different DOC wines. The Monferace Grignolino is cultivated in the geographical area identified in the Aleramic Monferrato, defined by the Po and Tanaro rivers, in the heart of Piedmont and the produced wine is characterized by a high content of tannins, marked when young, that evolve over the years. Its color is generally slight ruby red and garnet red with orange highlights with ageing. Sensory analysis on 10 Monferace wines (2019 vintage) was assessed after about 11 months of ageing in wood. A trained panel carried out the wine sensory descriptive analysis (sensory profile) as previously described (3, 4), derived from the ISO norms. The wines were evaluated using ISO (3591-1977) approved glasses in an ISO (8589-2007) tasting room, served in a randomized order and identified with a three-digit code. The descriptors of the wines were defined during a preliminary tasting session. The quantitative measures of the chosen attributes were acquired using FIZZ (Biosystems, Couternon, France). The data were subjected to statistical analysis (5). 
All the wines were characterized by 16 attributes: color (garnet red, orange highlights), odor (rose, violet, nutmeg, pepper, blackberries, cherries, jam/marmalade, dry herbaceous, oak) and taste (acidity, bitterness, astringency, structure (body) and taste-olfactory persistence). Some attributes were not quantitative statistically different (ANOVA and Tukey test, p=95%): acidity, bitterness, astringency. 
All the other attributes discriminated the wines with different intensities, from 2 groups in the case of rose, nutmeg and dry herbaceous to 6 groups for oak. The panel identified one more specific odor attribute in wine 2 (vanilla) and wine 7 (smoked-roasting). 
Each wine had a specificity: wine 5 had the highest intensity for rose, wine 10 for fruity attributes (blackberries, cherries), wine 2 for oak together with vanilla, wine 6 for dry herbaceous, wine 7 for smoked-roasting, wine 3 for pepper. Wines 8 and 9 had the lower intensities for many attributes and the profile of wine 1 was very similar to the average profile of all the 10 wines. 
These preliminary results showed the unity of sensory attributes among wines with a specificity for each product and remarked that Monferace is a very interesting wine style for Grignolino variety.

Frost risk projections in a changing climate are highly sensitive in time and space to frost modelling approaches

Late spring frost is a major challenge for various winegrowing regions across the world, its occurrence often leading to important yield losses and/or plant failure. Despite a significant increase in minimum temperatures worldwide, the spatial and temporal evolution of spring frost risk under a warmer climate remains largely uncertain. Recent projections of spring frost risk for viticulture in Europe throughout the 21st century show that its evolution strongly depends on the model approach used to simulate budburst. Furthermore, the frost damage modelling methods used in these projections are usually not assessed through comparison to field observations and/or frost damage reports. The present study aims at comparing frost risk projections simulated using six spring frost models based on two approaches: a) models considering a fixed damage threshold after the predicted budburst date (e.g BRIN, Smoothed-Utah, Growing Degree Days, Fenovitis) and b) models considering a dynamic frost sensitivity threshold based on the predicted grapevine winter/spring dehardening process (e.g. Ferguson model). The capability of each model to simulate an actual frost event for the Vitis vinifera cv. Chadonnay B was previously assessed by comparing simulated cold thermal stress to reports of events with frost damage in Chablis, the northernmost winegrowing region of Burgundy. Models exhibited scores of κ > 0.65 when reproducing the frost/non-frost damage years and an accuracy ranging from 0.82 to 0.90. Spring frost risk projections throughout the 21st century were performed for all winegrowing subregions of Bourgogne-Franche-Comté under two CMIP5 concentration pathways (4.5 and 8.5) using statistically downscaled 8×8 km daily air temperature and humidity of 13 climate models. Contrasting results with region-specific spring frost risk trends were observed. Three out of five models show a decrease in the frequency of frost years across the whole study area while the other two show an increase that is more or less pronounced depending on winegrowing subregion. Our findings indicate that the lack of accuracy in grapevine budburst and dehardening models makes climate projections of spring frost risk highly uncertain for grapevine cultivation regions.

Grapevine varietal diversity as mitigation tool for climate change: Agronomic and oenologic potential of 14 foreign varieties grown in Languedoc region (France)

Climate change effects in Languedoc include an expected rise in temperatures, increased evapotranspiration as well as more severe and frequent climatic hazards, such as frost, drought periods and heat waves. For winegrowers theses phenomena impact both yield and quality, resulting in more frequent unbalanced wines. Research on identified mitigation tools for vineyard management is necessary to improve resilience of grapevine agrosystems. Varietal assortment is one of them. This study focuses on agronomic and oenologic potential of 14 foreign varieties grown in Languedoc French region. Fourteen grapevine varieties were monitored during 2021 from June until harvest on eight different sites, some of which occurring on more than one site adding up to 21 different modalities: 7 white varieties Alvarinho B, Assyrtiko B (2), Malvasia Istriana B, Parellada B, Verdejo B, Verdelho B, Xarello B, and 7 black varieties Saperavi N (2), Touriga nacional N, Baga N, Aleatico N, Montepulciano N (2), Primitivo N (3), Calabrese N (3). Varietals were compared through the following parameters: phenology was assessed by using the information collected in the Database Network of French Vine Conservatories (INRAE-SupAgro-IFV, 2005-2015). The number of inflorescences for shoots from secondary buds and bourillons and suckers were observed to assess post-bud break frost tolerance potential. Grapevine water status was studied through stem water potential measurement, observation of foliage symptoms of drought, and 𝛿13C on must. Frequencies and intensities of downy mildew, powdery mildew, and black rot attacks were estimated before harvest on leaves and clusters and botrytis at harvest to assess disease susceptibilities. Berry composition was monitored from end of veraison until harvest. Yield and mean bunch weight were also calculated. Varieties were then ranked on a 1-4 scale for each parameter and compared through PCA. Forty two stations of the Mediterranean basin were compared by PCA with the Multicriteria Climatic Classification indicators in order to confront the collected information during 2021 campaign to the hypothesis that plants coming from dry and hot regions are genetically adapted to such climatic conditions.

Influence of climatic conditions on grape composition of Tempranillo in La Mancha DO (Spain)

The aim of this work was to analyze the variability in grape composition of the Tempranillo cultivar related to climatic conditions, in La Mancha Designation of Origin. Grape composition (sugar content, total acidity, pH, malic acid, and total and extractable anthocyanins) recorded during ripening, were analysed for the period 2000-2019. The weather conditions at daily time scale, recorded during the same period, were also evaluated. The relationships between grape parameters with climatic variables related to temperature and to water deficits, referring different periods between phenological events along the growing cycle, were evaluated using regression analysis. High variability in grape composition was observed in the period analysed. Total acidity varied between 3.7 and 7.3 gL-1 while malic acid varied between 1.2 and 4 gL-1. The extractable anthocyanins ranged between 526 and 972 mgL-1, and total anthocyanins ranged between 922 and 1388 mgL-1, being the lowest values recorded in the hottest year (2017). Total acidity decreased 0.77 gL-1 for an increase of 100 GDD, while malic acid decrease in 0.42 gL-1 for the same GDD increase, being the period between veraison and harvest the one that seemed to have higher influence on acidity. In addition, it was confirmed that increasing water deficits decreased acidity. Total and extractable anthocyanins increased in about 210 and 105 mgL-1, respectively, with an increase of 100 GDD from veraison to harvest, and the increase in water deficits favour the increase of anthocyanins, both total and extractable anthocyanins. Total and extractable anthocyanins concentration increased in 35 and 22 mgL-1 per an increase of 10 mm in the water deficit. These results can be of interest to understand the potential changes that grapes composition may suffer under future warmer climates.

Climate change impacts on Douro Region viticulture and adaptation measures

Climate has a significant impact in the success of any agricultural system, with a direct influence on the crops suitability to a given region, interfering on yield and quality and also with the economic sustainability of the productive activity. In the Douro Demarcated Region (RDD), as in most regions of the Mediterranean climate, the scarce precipitation (33% has less than 600 mm per year), and your high variability, associated with high rates of evapotranspiration during the summer, is usually one of the fundamental factors that limit the grapevine development, as well as the production and quality of the harvest. Thus, facing the scenario in temperature changes for the next decades (1.5-2.5°C) and confirming the predictions of precipitation decreases and/or great variability in the occurrence of heat waves and intense rainfall, the consequences for slope stability in mountain viticulture and sustainability of all operations involved, are risks to be taken into account. In this way, a deepest and sustained knowledge regarding the adaptation measures to adverse environmental conditions is of a crucial importance, enabling a more efficient adaptation of plant growth conditions and the optimization of production and quality of the grapevines. The development of this work, carried out in two commercial vineyards, one located in Soutelo do Douro, São João da Pesqueira, Cima Corgo sub-region, and another located in Numão, Vila Nova de Foz Côa, Douro Superior sub-region, it seeks to establish a relationship between climatic elements and physiological, productive and qualitative parameters, as well as to evaluate the effectiveness of adaptation measures, including different types of deficit irrigation (2002-2019) and the application of shading nets (2019-2020) in the physiological, viticultural and oenological behavior in the Touriga Nacional and Moscatel Galego Branco varieties, respectively. The results showed that the application of deficit irrigation allowed to significantly reduce the impact of the adverse weather conditions at key moments in the development of the grapevine, particularly in the period immediately before veráison and maturation, reducing the negative effects on the physiological processes and productivity, without compromise the must quality parameters. On the other hand, the application of shading nets significantly reduced de leaves temperature, allowing to increase the water potential, stomatal conductance and photosynthetic rate of grapes, which was reflected in the yield increase in the 2nd year of the study. For the maturation indicators, higher levels of total acidity, malic acid and assimilable nitrogen were obtained. The last measure presents a huge potential, being essential to carry out more years of trials to obtain stronger conclusions in terms of production parameters, but also in characteristics as important as the grape ripening components and the organoleptic characteristics of wines.

Impact of yeast derivatives to increase the phenolic maturity and aroma intensity of wine

Using viticultural and enological techniques to increase aromatics in white wine is a prized yet challenging technique for commercial wine producers. Equally difficult are challenges encountered in hastening phenolic maturity and thereby increasing color intensity in red wines. The ability to alter organoleptic and visual properties of wines plays a decisive role in vintages in which grapes are not able to reach full maturity, which is seen increasingly more often as a result of climate change. A new, yeast-based product on the viticultural market may give the opportunity to increase sensory properties of finished wines. Manufacturer packaging claims these yeast derivatives intensify wine aromas of white grape varieties, as well as improve phenolic ripeness of red varieties, but the effects of this application have been little researched until now. The current study applied the yeast derivative, according to the manufacture’s instructions, to the leaves of both neutral and aromatic white wine varieties, as well as on structured red wine varieties. Chemical parameters and volatile aromatics were analyzed in grape musts and finished wines, and all wines were subjected to sensory analysis by a tasting panel. Collective results of all analyses showed that the application of the yeast derivative in the vineyard showed no effect across all varieties examined, and did not intensify white wine aromatics, nor improve phenolic ripeness and color intensity in red wine.
