Développer des outils simples pour accompagner les viticulteurs dans leurs changements de pratiques et répondre aux enjeux du siècle à venir

Abstract

La viticulture bordelaise fait actuellement face à des enjeux d’envergure pour s’intégrer dans ce nouveau siècle et réussir la transition agroécologique. Pour les accompagner dans l’évolution progressive de leurs pratiques, nous mettons au service des milliers de viticulteurs de notre département une organisation spécifique allant de la Recherche et Développement au conseil individualisé. Nous testons et développons des outils facilitant les essais et le transfert de connaissances. Au travers de 8 outils et 4 niveaux d’accompagnement, nous mettons en avant dans cet article nos solutions pour la profession.  Pour favoriser la gestion durable des sols viticoles et la culture de la vigne sans herbicides, 4 outils complémentaires ont été développés autour de l’étude des analyses de sol, la reconnaissance de la flore et le choix de pratiques. La protection intégrée du vignoble, quant à elle, nécessite un bon réglage du pulvérisateur, de savoir positionner les traitements et d’utiliser des alternatives aux produits classiques. Pour cela, nous proposons des outils, tableaux et règles de décision simples et synthétiques et travaillons à la démonstration de stratégies de protection à base de biocontrôle.

Simple tools development to help winegrowers change their practices and meet the challenges of the next century

Bordeaux’s viticulture is currently facing major challenges to enter this new century and make a success of the agro-ecological transition. To support them in the gradual evolution of their practices, we provide the thousand of winegrowers in our department with a specific organization ranging from Research and Development to individualized advice. We test and develop tools to facilitate trials and knowledge transfer. In this article, we highlight our solutions for the profession through 8 tools and 4 levels of support. To promote the sustainable management of vineyard soils and the cultivation of vines without herbicides, 4 complementary tools have been developed aroud the study of soil analyses, flora recognition and the choice of practices. For its part, integrated vineyard protection requires good sprayer adjustment, knowing when to position treatments and using alternatives to pesticides. To this end, we offer simple and synthetic tools, tables or decision rules and are working to demonstrate biocontrol-based protection strategies.

Entwicklung einfacher instrumente zur begleitung von weinbauern bei der änderung ihrer praktiken und zur bewältigung der herausforderungen des kommenden jahrhunderts

Der französische weinbau steht derzeit vor großen herausforderungen, um sich in das neue jahrhundert zu integrieren: klimawandel, notwendige reduzierung der betriebsmittel, gesellschaftliche herausforderungen, veränderte konsumgewohnheiten, mangel an arbeitskräften ….  Der vinopôle bordeaux-aquitaine, zu dem auch die teams der chambre d’agriculture de la gironde gehören, unterstützt die weinbauern in den regionen gironde und bergerac-duras bei der schrittweisen weiterentwicklung ihrer praktiken. Zahlreiche angewandte forschungsprogramme werden durchgeführt, um der lokalen weinbaubranche die technischen referenzen zu liefern, die sie benötigt, um diesen herausforderungen zu begegnen. Die ziele sind ehrgeizig: verzicht auf herbizide, reduzierung der ausgebrachten mengen an pflanzenschutzmitteln über verschiedene hebel wie die optimierung der kupferdosierung, einsatz von biolösungen oder physikalischen methoden zum schutz der reben anstelle von klassischen produkten, optimierung der anwendungen über die richtige einstellung der spritzgeräte, entwicklung von robotern …. Die mitarbeiter der chambre d’agriculture de la gironde stellen die verbindung zwischen der forschung und den winzern her, indem sie teams und mitarbeiter beschäftigen, die auf forschung und entwicklung, gruppenleitung oder beratung spezialisiert sind. Um einen effizienten und schnellen transfer der durch forschung und entwicklung erworbenen kenntnisse zu ermöglichen, werden einfache werkzeuge entwickelt. Sie ermöglichen es, technische verfahren zur bodenbewirtschaftung, zum schutz der weinreben und im weiteren sinne zur pflanzenbewirtschaftung zu erstellen. Zu nennen sind hier insbesondere die charakterisierung des potenzials von weinbauböden und die identifizierung der flora, um die besten maßnahmen in abhängigkeit von den produktionszielen zu bestimmen. Ein weiteres wichtiges thema ist die reduzierung von pflanzenschutzmitteln, die optimierung der behandlungspositionierung und der angewandten dosen, aber auch die verwendung alternativer produkte dank lokaler und unabhängiger wirksamkeitsreferenzen.  Dank dieser arbeit konnten wir viele weinbauern dabei unterstützen, den einsatz von herbiziden einzustellen und pflanzenbedeckungen zu verwenden. Wir arbeiten an der einführung neuer, umweltfreundlicherer schutzstrategien. Sie ermöglichen es beispielsweise, die menge des eingesetzten kupfers in manchen jahren um mehr als 750 g/ha durch den einsatz von alternativen zu reduzieren, ohne dass die kosten für den schutz steigen. Wir bieten den winzern einfache und zugängliche entscheidungshilfen an. Wir haben beobachtet, dass bei den eingriffen zur einstellung der spritzgeräte mehr als 75 % eine änderung der einstellungen für eine bessere anwendungsqualität benötigen. Mit unseren experten stellen wir also eine ausreichende anwendungsqualität sicher. Diese kenntnisse werden dann von den weinbauberatern vor ort verwertet, die sie über ihre empfehlungen und ihre begleitung an die winzer weitergeben. Auf diese weise bieten wir der weinbranche eine umfassende begleitung.  Der agrarökologische übergang ist im gange und mit unserer organisation, unseren werkzeugen und ergebnissen machen wir diesen für den berufsstand einfacher.

Arbuscular mycorrhizal fungi as biomarkers of vineyard yield in Champagne

The vine is colonized by a multitude of micro-organisms (fungi, bacteria, oomycetes) mainly coming from the microbial reservoir constituted by the soil. These microorganisms have positive or negative effects on the vine (protection against pathogens, resistance to abiotic stress, nutrition, but also triggering of diseases) (Fournier, Pellan et al. 2022). In addition to these functional roles, they respond quickly to environmental changes (climate, cultural practices) which could make them good bioindicators of the functioning of the wine ecosystem.

Exploring changes in browning kinetics, color, and antioxidants due to dealcoholization of wine

The global consumer demand for low or non-alcoholic wine is growing steadily in recent years, driven by health concerns, religious beliefs, and personal taste preferences etc.. Consequently, the removal of alcohol from wine can significantly alter its chemical and sensory properties, including color, aroma, and taste, which make a significant challenge for consumer to accept these products. Ethanol plays a crucial role in various chemical reactions and interactions that contribute to the development of wine’s characteristics.

Physicochemical parameters of juices made from different grape varieties in the 2019 and 2020 Harvests of Rio Grande do Sul

This study evaluated the physicochemical parameters of grape juices produced in the serra gaúcha from the 2019 and 2020 harvests. To do this, 43 juice samples were analyzed, and divided into four distinct categories: juices made exclusively from bordô grapes (sb), juices made from bordô and niágara grapes (sbn), juices combining bordô and isabel grapes, and juices made from cuts of several grape varieties.

Gastrointestinal digestion of wine sulphites and their effects on human gut microbiota

Sulphites are by far the most widely used additive in the wine industry. In relation to health, the interaction of sulphites with the gut microbiota has not been addressed so far. Following the consumption of wine and other sulphite-containing foods, the gastrointestinal tract and the microbiome are one of the first barriers that these compounds face in the human organism. In this study, we used a previously validated gastrointestinal digestion model (SIMGI®) [1,2] to evaluate the effect of intestinal digestion of wine sulphites on the gut microbiome.

History of inorganic and isotopic signatures in Champagne over the last century: lessons

The notion of «terroir» refers to the link between the composition, quality and taste of a wine, on the one hand, and its place of origin, on the other. It involves, among other things, the signature of soil elements, as well as the influence of climatic conditions and plant material used. The composition of the wine is also influenced by the winemaking, storage and bottling processes. We were lucky enough to have a time series of the same champagne, from the end of the first world war to the present. On this exceptional time series, we followed, with the most advanced methods, all the elemental signatures by isotopic multi-dilution, the evolution of the isotopic ratios of heavy elements with very high precision of Sr, Pb, B and Cu.
